Udon in an Italian Way!

Have u tried mixing udon and spaghetti's sauce b4?
I was trying to look for some spaghetti or pasta, but i couldn't find it~~
So..i had this idea to use my udon! =)
that's a meal for one!
udon in italian way 1
very simple ingredients that you'll need...no oil involved~!
Button mushrooms, a tomato and Udon...
as for seasoning..just some black pepper and a packet of Ketchup!


My way of doing it:
1. Cut the tomato into to half, one for dicing and the other for blending which will be the sauce
2. Slice the button mushrooms.
3. Cook the udon in boiling water, meanwhile you can heat up the blended tomato sauce. Just add in the mushrooms & diced tomatoes.
4. Toss udon into the mushroom sauce. Sprinkle black pepper.
5. Let it simmer for just a minute, remember not to overcook the mushrooms and udon.
6. Off the stove fire & mix the packet of ketchup in. If you feel that it's not salty enough, a pinch of salt can be sprinkled into the sauce. If you want more flavour & aroma, just sprinkle some herbs like oregano..
7. Lastly, serve.... !


And here u go!

A meal in less than 20 minutes!
Nonetheless, it's healthy! and it will be even better if you omit the packet of ketchup.

The Udon's texture is a little bit like spaghetti!
And there's some chewiness in it!

Why bother to buy store bought pasta sauces when u can make it on your on in such a short time... Try it!

Another of Coraine's Aglio Oglio

Simple ingredients..
3 kinds of mushrooms..white button, swiss brown button, and portbello~~
Capsicum and garlic...
wholemeal spaghetti~!
So it's vegetarian~~



The spaghetti is chewy to bite..
some people may not like it, as it is harder in texture compared to regular kind...



I seasoned it with black pepper, some basil+ oregano and a little bit of salt...



Don't u love these mushrooms??

Spinach Fettuccine with Homemade Tomato Sauce

As you can see..my whole day was filled with cookings and bakings...
Non stop...from 9+am till 7pm..ACHE...
I'm gona have a good rest after blogging about our dinner...


Homemade Tomato sauce in the making...


San Remo's Spinach Fettuccine...


Sauteed onions, button mushrooms...green & yellow capsicums, carrot...
Absolutely a vegetarian's meal...


Colourful? =)


& also cooked some mushroom soup to go with the fettuccine...
everyting goes well together
everyone of us ate happily!

This is my sense of satisfaction...
As simple as that.... =)

They just dont match!

It's my turn to cook for my in laws again~~
Wanted to use the instant can soup to cook the hot and sour soup...
i thought i bought 2 of the same kind..
but the other is actually scallop seafood soup! Argh!


So i ended up with 2 kinds of soup!

Not bad la..just add more ingredients and boil...
and u get to drink msg soup..WAHAHA.. =X


And i'm gona let them try my "stir fried spaghetti"

Drinking a sip of the chinese soup + a mouthful of spaghetti gave me a weird feeling...


I love to see the strands of spaghetti!


In laws were not used to eating these...
mother in law said that the spaghetti was very hard...hehe..cos it's wholemeal ma...
maybe she thought that i've undercooked it...
and they don't eat salmon...
Sooooo....i got to try other stuffs next time....
Try harder!

Simple Dinner For Us~~



I wanna cook spaghetti for dinner..
but wanna lower the calorie...
so i used this mushroom soup to substitute the creamy pasta sauce
It's only like 200 calories for the whole can...
and we shared among 6 pple...

I sauteed onion and garlic with oil...
Add in the mushroom soup + 1/2 cup of water...
Cook the asparagus first....
then the salmon.
Sprinkle with some salt + black pepper...
You can drizzle this over your ready cooked pasta or mix the pasta into the sauce
then serve....

Pieces of salmon + asparagus

Added loads and loads of black pepper...


And my lao gong's all time favourite..hehe..
tomato soup again!
i tink i will take a break from cooking this...


It's a super full meal

Baked Mushroom + Salmon Pasta...


My blog is becoming a food blog again!!
should i be happy or sad about it?
i guess my biggest interest is still in cooking and baking...
looking at my family members eating my food...
i always feel very glad and satisfied~~
OK..stop nagging here...

but this is a whole load for cheese!!
Lucky i bought the one with 35% less fat...

My Aglio Oglio~


in the morning, i cooked this for lao gong to pack it for lunch~~
I cooked again for myself again for lunch~~

This is kind of my own version of Aglio Oglio...

Lots of garlic~~


Bacon~~


3 kind of mushroom~~
swiss button, white button and portobello mushrooms


Wholemeal spaghetti~~


Chilli~~


I cooked it in this way~
Sauteed garlic in some oil,
add in bacon....
when bacon is 3/4 cooked...throw in the mushrooms...
sprinkle black pepper~~


Add in the spaghetti when the mushroom is 3/4 cooked~~
then sprinkle more black pepper...
i sprinkled alot alot alot alot alot!

Off the fire~~
And lastly add in bits of chilli...and some salt to taste...
stir it well...~~

I didnt add in any chilli in the end, cos the black pepper is hot enough!


& TADAM!


Healthier than creamy pastas~~
although i really love creamy ones!

Baked Rice & Linguine~~

Really fresh salmon....


I was walking around Giant ytd and saw these mushrooms goin real cheap!!
$7 for all!!
So cheap!
other supermarkets are selling at about 3.40 for whites, & 3.70 for browns...
So i just grabbed it...
& decided to make
Salmon + Mushroom Baked Rice


Lao gong and me preparing..~~

It's not oily inside cos i didnt use any butter..
the cheese is already sinful enough~!
