Milk Loaf Tutorial

Ingredients that you'll need

143g fresh milk (I used Farmhouse Low Fat)
35g egg
25g caster sugar
5g salt
250g bread flour
4g Instant yeast
38g unsalted butter (I used crisco vegetable shortening)



simple ingredients which will produce a wonderful bread!




Let's begin!
Mix all dry ingredients together,
Bread flour, yeast, salt, sugar
& dig a well in the middle



Pour the liquid (milk and egg) in slowly, at the same time mixing it



Keep mixing...



Till it forms a sticky dough



And kneading time starts now...!
I used my hand mixer instead, it's faster! =p

hand kneading needs about 30mins.
for machine, about 10-15mins.



Add in the butter/shortening after 10mins of kneading



Knead further until the dough is non sticky and smooth



To check whether the dough is well kneaded,
Take a small piece of dough stretch with your fingers,
if it can be stretched till thin before breaking,
then it's done!



Shape into a round dough for first proofing/rising
(I put it in my oven with the door closed)



After 1 - 1 1/2hour,
it should double in size.
Press the air out from the dough, or knead it lightly.



Divide into 3 or 4 balls
& let it rest for 15 minutes



Flatten out the dough...



then roll them up tightly into swiss roll style.
Flatten it again, and repeat with another round of swiss roll style



Place the rolls into the bread tin
Send into the oven for final proofing/rising



This is my proofed/risen bread dough
after 1hour.
be gentle when you move the tin,
the air might be lost during the movement.



Bake in 180degrees preheated oven for 30 - 35 mins.



Unmould immediately



Leave on the wire rack to let cool completely



Slice it up when it has cooled down completely



And now you have a cottony soft freshly baked bread!





You can keep it for next morning's breakfast,
it will be still as soft!
