You will need all these:
50g Butter
100g Sugar
1 egg (Lightly beaten)
1 tsp cinnamon
280g Plain/Cake Flour
2 tsp Baking Powder
1 cup Milk
Apples cut into cubes( I used one big bowl)
The steps are:
Preheat your oven at 210 degrees.
1) Cream butter and sugar till fluffy and creamy
2) Add in egg gradually, thrice. Mix well b4 the next addition
3) Sieve in 1/3 of flour, then half cup of milk, mix them well & then followed by another 1/3 of flour and milk again.Have to stir the mixture well b4 the next step.
4) Last addition will be the remaining 1/3 of flour.
Stir thoroughly again.
5) Add in apples and fold into the mixture.
6) Spoon into respective muffin cups, 2/3 full.
Bake for 20-25 mins.
My previous muffin's mixture flowed out while baking. This time round, i tried to fill half of my muffin cup, and it's not tall enough. *SIGH*
I havent tasted it, but my boyf and future mother in law said that its nice and soft! So i tink it's a keeper.
